Being from the midwest, the term Grit reminds me of southern grits

Recently spending time in NC, I consumed my fair share of this item.

Grits can be

Hard

Grainy

Tasteless

Or, cooked properly, a completely different experience.

Smooth

Flavorful

Mouth watering with anticipation in each spoonful

How can this one item, Grits, take on such a difference.

Well, that would be the real meaning of Grit.
